1. Beat the cheese to soften and mix in sour cream, add lemon juice and season to taste. Fill into a plastic bag and keep aside. 2. Using a vegetable peeler, shave paper thin long strips of cucumber, turning the cucumber between each strip until you get to the seeds in the center. Season to taste.
3. Place 1 heaping tsp of salmon on one end of the cucumber slice. Roll up and stick together with a toothpick.
4. Snip off a tiny corner of the plastic piping bag. Pipe a tiny dollop of sour cream mixture and a sprinkling of chopped chives or a tiny sprig of dill.
Variation: ? Reverse by piping sour cream into rolls and then topping rolls with salmon and then garnish. |
